Caprese Grilled Chicken with Balsamic Reduction

If any of you out there are looking for a delicious, yet easy weeknight meal, you will definitely want to take a look at the below recipe.

I’m a meal planner. It actually has become routine for me to sit down on a Saturday or Sunday and take a few minutes with my cookbooks, log on to my pinterest account, and look for what I want to make for dinner that upcoming week.

When I came across this recipe via Pinterest, I knew I wanted to try it.

Caprese Grilled Chicken with Balsamic Reduction

Prep time: 5 minutes
Cook time: 25 minutes
Total time: 30 minutes

Ingredients:

6 boneless, skinless chicken breasts
1/4 cup balsamic vinegar
1 tablespoon butter
6 slices mozzarella cheese
6 slices tomato
6 large basil leaves

Directions

1. Prepare the chicken breasts on the grill. While the chicken is cooking, pour balsamic vinegar into a small sized saucepan and cooked until reduced by half. Add in butter and stir with a whisk until completely combined. Set aside.

2. Slice mozzarella, tomato and get your basil leaves ready.

3. Once chicken is done, top with mozzarella cheese, basil leaf, and then tomato slice.

4.Drizzle with Balsamic reduction, serve warm and enjoy!

Weekend Wrap Up

This weekend was relaxing yet busy at the same time. We had great weather all weekend which definitely made it that much more enjoyable.

Friday night hubs and I headed over to our favorite spot for dinner for our Friday night date nights- Bad Daddy’s burger bar. After drinks and burgers, we stopped by at home to pick up Baxter and went over to Blakeney music on the green. They have a live band and a fun atmosphere on Fridays and Saturday nights. We grabbed coffee at Starbucks and spent the rest of our night listening to all the great music.

Saturday was spent running errands in the morning and then while hubs went to work out and hang out with friends, I was on my way to work for a Wedding reception. The Wedding went great and it was good to see another Bride and Groom so happy with the outcome of their event.

Sunday we woke up and headed to the Four Mile Creek Greenway trail. There were so many dogs {which made Baxter happy!} runners, and people riding bikes. All that walking gave us an appetite so we made our way over to Icehouse in South End Charlotte. Fried pickles, sliders, and a chicken wrap were all consumed and we were happy. We spent the rest of our Sunday decorating the house for fall and Halloween, and relaxed watching football.

Hello World!

We’ve been talking about starting a blog for quite some time and finally sat down and did it. We went back and forth about a name, but decided on aloveletteraway, because that’s just what we are. For the last 7 years we have been living in different cities, except for a few summers in college and the 3 months before Kim’s wedding/after Kelly graduated from college where we both lived with our parents {CAN YOU SAY BEST 3 MONTHS EVER!?} The distance never fazed us though. Aside from our parents being absolutely amazing and flying one of us to see the other every month or so {although recently it seems like we see each other every other week!}, we had endless phone convos, and a multitude of picture texts back and forth which basically made it seem like we were in the same place. We’re sisters, best friends, soul mates, partners in crime, two peas in a pod… you get the picture.

So who are we exactly? We are two twenty-something sisters who are typical girls: love shopping, cooking, baking, crafting, gossiping, and spending time with our friends and family. We wanted a place where we could share all of these things plus a little bit of our lives with our friends, both real life friends and cyberfriends. And if our blogging friends become our real life friends, well won’t that just be special!

So welcome. Stay awhile. Stalk if you’d like. We think this is a start to a beautiful friendship.
