When I came across this recipe via Pinterest, I knew I wanted to try it.
Caprese Grilled Chicken with Balsamic Reduction
Prep time: 5 minutes
Cook time: 25 minutes
Total time: 30 minutes
6 boneless, skinless chicken breasts
1/4 cup balsamic vinegar
1 tablespoon butter
6 slices mozzarella cheese
6 slices tomato
6 large basil leaves
1. Prepare the chicken breasts on the grill. While the chicken is cooking, pour balsamic vinegar into a small sized saucepan and cooked until reduced by half. Add in butter and stir with a whisk until completely combined. Set aside.
2. Slice mozzarella, tomato and get your basil leaves ready.
3. Once chicken is done, top with mozzarella cheese, basil leaf, and then tomato slice.
4.Drizzle with Balsamic reduction, serve warm and enjoy!
