Taco Soup

The fact that it has been a lot cooler in Charlotte the past few days, definitely made me break out my go-to Taco Soup recipe from my cookbook. I have been waiting for a cooler day to be able to make it, so I took the chance when I could.

This soup is filling and delicious! I usually take the leftovers and freeze them so we have them on hand for another day.

Taco Soup Recipe:

What you’ll need:

1 large onion chopped
1 lb ground beef
1 package taco seasoning
1 can of corn
1 can fat-free chicken broth
1 can black beans-undrained
1 can great northern beans-undrained
1 can fat-free refried beans
1 can diced tomatoes
1 can spicy seasoned tomatoes-jalapeno


1. Saute the onion with hamburger until done in a large pot
2. Add all other ingredients to pot.
3. Simmer for 30-40 minutes

You can add some hot sauce to the pot if you’re wanting a little bit of a kick to it.

My husband and I usually add sour cream and tortilla chips to ours to add some more flavor.
