Ravioli with Balsamic Brown Butter

I’ve had this Giada recipe since college. I think it may have been one of the first meals that I cooked for Le Roux {trying to impress him with my skills of course} and it has been a go-to ever since. The best part about it is that I usually have 90% of the ingredients already in the house which is always a plus!

Ravioli with Balsamic Brown Butter

What you’ll need:

18-20 ounces of store-bought ravioli {Any kind will do, but I usually get squash or cheese}
6 tablespoons unsalted butter
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/3 cup toasted, chopped walnuts
1/4 cup grated Parmesan


1. Bring a large pot of salted water to boil over high heat. Add the ravioli and cook 4-5 minutes until done, stirring occasionally.

2. Drain ravioli and place in a large bowl or platter. Set aside.

3. Meanwhile, in a medium saucepan cook the butter over medium heat, and stir occasionally. When the foam subsides, and the butter begins to turn a golden brown, about 3 minutes, turn off the heat. Let butter cool for about 1 minute.

4. Once butter is almost cooled, stir in the balsamic vinegar, salt, and pepper.

5. Pour the balsamic brown butter sauce over the ravioli. Sprinkle the walnuts and parmesan cheese on top and serve immediately.

Today this little cutie turns 26!

Happy birthday, Kimmy! You’re not just my sister but my best friend and I’m so lucky to have you in my life. Thank you for all the times you are there for me and the way you take care of me like a good big sister eventhough you’re just one year older. Thank you for the advice you give me, the times you just listen when I want to vent, and mostly importantly the times you pretend to be me and call people when I don’t want to. You definitely deserve more than just one day to celebrate you, so I hope today is extra fabulous!

Happy Thanksgiving!

We made it a family tradition that you have to cook the first major holiday after you get married. Kim cooked Easter in April of 2011 and now we’re up here in Richmond, VA at Marisa’s house as she cooks Thanksgiving dinner for our immediate family {7 of us now!} and also our Aunt Dawn, Uncle Joe, and their three kids. We are really enjoying spending this time with our family, but wanted to take a minute out of our day to say THANK YOU for reading our blog. It’s only been two months since we started aloveletteraway and just wanted to let you know how much we appreciate you. We are so thankful for the love and support of our friends and family, and even more thankful for those people who we don’t know that check back daily to see what we’re up to. We hope you are all surrounded today by your family and are as uncomfortably full as we are. Gobble gobble!

Wednesday Wish List: Paris!

Back in 2009, we loaded up our matching Northface backpacks and headed to Europe. Eleven days, five countries, just the two of us. We have to be honest though, we went looking like pretty serious backpackers, but ended up having to buy a suitcase in Munich because we had bought so much stuff along the way that we couldn’t carry it on our backs.
It was such an amazing trip and ever since we got back we’ve been trying to find a time that worked for both of us to plan the next one. There are so many places that we would love to go to, but Paris has always been on the top of our list. Kelly has been before but we know it would be a different experience if we went there together. We often sit around and daydream about the two of us running around Paris together shopping, sightseeing, and eating too many macarons. It usually goes a little something like this: there we are, strutting down Champs-Elysees with a “Louis on our arms, Louboutin’s on our feet, French bread in our hand, and a beret on our heads.” {that is a direct quote from Mrs. Kimberly Pelser, July 2012}. Today, when we started talking about thing that we want, a trip to Paris immediately came to mind and now that’s all we can think about, which led us to create a Paris inspired wish list this week.
