This is the kind of recipe that is easy to throw together, but tastes like you spent all day in the kitchen.

Italian Chicken

What you’ll need:

Thinly sliced fresh chicken breasts {about 4-5 pieces}
5 Roma tomatoes
2 Cloves of garlic
1 Jar of marinated artichoke hearts
Extra virgin olive oil
Mozzarella cheese


1. Pre-heat oven to 350 degrees F

2. Chop up  your 5 Roma tomatoes

3. Thinly slice your two cloves of garlic

4. Drain your jar of marinated artichoke hearts

5. Place your tomatoes, garlic slices, and drained artichoke hearts in a medium-sized bowl

6. Pour in two tablespoons of extra virgin olive oil into the bowl along with a generous amount of salt and pepper.

7. Add a teaspoon of sugar and two tablespoons of flour into the medium-sized bowl as well.

8.  Place chicken breasts into a baking dish and pour tomato and artichoke mixture on top.

9. Bake chicken at 350 for 30 minutes. When there is 5 more minutes left of cooking time, take your baking dish out of the oven and top with Mozzarella cheese. 

10. Bake until time is done and Enjoy!

We paired our chicken dish with a wedge salad that was topped with blue cheese dressing, crispy crumbled bacon, and a little bit of salt and pepper. Delicious!
