Valentine’s Day Treats

We’ve been running around like crazy picking our outfits and getting everything set for Fashion Week! We haven’t really been focused on anything except our trip to New York, but still have a special little section of our brain that’s thinking about Valentine’s Day. We love Valentine’s Day! I mean, how could you not? It’s all flowers and hearts and glitter and LOVE. We LOVE love. And although it pains us to not be home this weekend crafting heart shaped things and preparing our pink and red baked goods, we think Fashion Week will more than make up for it. With that being said, we couldn’t help but search the internet for fun Valentine’s Day recipes. Hopefully we won’t be too exhausted when we get home on Tuesday to whip up a few holiday treats for you, but in the meantime, we hope you’ll be okay with our Valentine’s Day Treat Inspiration. It’s just one week away! So here are some some sweet treats to help you figure out what to make for your Valentine!

BBQ Beer Chicken

We both love pulled pork, so why not pulled chicken? When we stumbled across this recipe via Pinterest {of course!} it was a must try.This was a great addition to our Super Bowl menu yesterday. This recipe makes a lot, so it is great to have as leftovers the next day, or make for a tailgating event with lots of your friends.

BBQ Beer Chicken in the crockpot:

What you’ll need:

3 pounds boneless, skinless fresh chicken breasts (6 large)
1 tbsp onion powder
1 tbsp paprika
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp black pepper
1 cup beer {any kind you like} We used a dark beer and the flavor was great!
4 cups (32 ounces) of barbecue sauce {any kind you like} We used Jack Daniels BBQ sauce which is our favorite.
Hamburger buns
Coleslaw

Directions:

1. Add all the ingredients, aside from the chicken, to the crockpot and combine.
2. Add the chicken to the crockpot. Make sure to submerge the chicken into the sauce so it’s covered.
3. Set your crockpot to low for 6 hours.
4. After 6 hours, shred the chicken and then add it back to the sauce in the crockpot. Let the shredded chicken sit for about 15 or so minutes so the shredded chicken absorbs the sauce.
5. Serve on hamburger buns and top with coleslaw or any other topping desired!

Pulled chicken sandwich

*Note*
The chicken may take longer or shorter than 6 hours depending on the size of your crockpot. After 4 hours, check the chicken to see if it is ready to be shredded.

Turkey Chili

Crockpots are awesome. Why you ask? The fact that you can throw ingredients into one pot and let it cook all day with hardly any effort is a glorious thing! Your house will smell delicious and the way that you can go about your day without being in the kitchen slaving away is an added bonus.

This delicious chili is great paired with corn bread and any toppings you feel your chili deserves.

Turkey Chili: {Makes 6-8 servings}

Ingredients:

1 pound lean ground turkey
1 small onion chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) chickpeas, rinsed and drained
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (8 ounces) tomato sauce
1 can (4 ounces) diced miled green chilies
1 to 2 tablespoons chili powder

Directions:

1. Cook and stir turkey and onion in a medium skillet over medium to high heat until turkey is no longer pink. Drain and discard fat.

2. Transfer cooked turkey and onion mixture into your crockpot.

3. Add all remaining ingredients and mix well.

4. Cover and cook on high 6-8 hours.

Chocolate Snowflake Cookies

We’re not sure where this recipe originated because its been in our mom’s cookbook for as long as we can remember. These chocolate snowflake cookies are our favorite Christmas cookies and we always look forward to making them the day before Christmas Eve with our mom.

Chocolate Snowflake Cookies {Yields 8 dozen}

Ingredients:

2 cups sugar
1/2 cup vegetable oil
4 (1 ounce) squares unsweetened chocolate, melted
4 eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup sifted powdered sugar

Directions:

1. Combine the first 3 ingredients in a large mixing bowl; beat at medium speed with an electric mixer until blended. Add the eggs and vanilla,mixing well.

2. In a separate bowl, combine flour, baking powder,and salt. Add about one-fourth of the dry mixture at a time to the chocolate mixture, mixing after each addition. Cover and chill dough for at least 2 hours in the fridge.

3. Shape dough into 1-inch balls, and roll in powdered sugar.

4. Place cookies 2 inches apart on greased cookie sheets. Bake at 350 degrees for 10-12 minutes. Cool on wire racks.

Snowflake cookies

Although these are our favorite holiday cookie, you can make them all winter. They are the perfect treat to pair with your hot cocoa as you’re snuggled up trying to keep warm during the next few cold months.

Italian Chicken

This is the kind of recipe that is easy to throw together, but tastes like you spent all day in the kitchen.

Italian Chicken

What you’ll need:

Thinly sliced fresh chicken breasts {about 4-5 pieces}
5 Roma tomatoes
2 Cloves of garlic
1 Jar of marinated artichoke hearts
Extra virgin olive oil
Salt
Pepper
Sugar
Flour
Mozzarella cheese

Instructions:

1. Pre-heat oven to 350 degrees F

2. Chop up  your 5 Roma tomatoes

3. Thinly slice your two cloves of garlic

4. Drain your jar of marinated artichoke hearts

5. Place your tomatoes, garlic slices, and drained artichoke hearts in a medium-sized bowl

6. Pour in two tablespoons of extra virgin olive oil into the bowl along with a generous amount of salt and pepper.

7. Add a teaspoon of sugar and two tablespoons of flour into the medium-sized bowl as well.

8.  Place chicken breasts into a baking dish and pour tomato and artichoke mixture on top.

9. Bake chicken at 350 for 30 minutes. When there is 5 more minutes left of cooking time, take your baking dish out of the oven and top with Mozzarella cheese. 

10. Bake until time is done and Enjoy!

We paired our chicken dish with a wedge salad that was topped with blue cheese dressing, crispy crumbled bacon, and a little bit of salt and pepper. Delicious!

Pumpkin Chocolate Chip Bread

We love everything and anything pumpkin. It’s the one thing we can’t get enough of, especially this time of year! We stumbled across this recipe and made it right away. It’s delicious and you will be finding yourself making it again and again!

Pumpkin Chocolate Chip Bread

What you’ll need:

1 cup of sugar
1 cup of canned pumpkin {we prefer Libby’s}
1/4 cup canola oil
1/4 cup vanilla pudding
2 eggs
1 1/2 cups of flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
3/4 cup of chocolate chips
cooking spray

Instructions:

1. Preheat oven to 350 degrees F

2. Combine the first 5 ingredients in a large bowl, and stir well with a whisk.

3. Lightly spoon flour into dry measuring cups and level with a knife. Combine flour, cinnamon, salt, and baking soda in a separate bowl, and stir with a whisk.

4. Add the flour mixture to pumpkin mixture, stirring until moist. Stir in the chocolate chips.

5. Spoon batter into a bread/loaf pan that is already coated with cooking spray.

6. Bake at 350 for 60-75 minutes and check with a toothpick to ensure the center comes out clean.

7. Cool 10 minutes on a wire rack, and remove from the pan.

Halloween Pretzel Treats

Here is a yummy Halloween treat that is sure to be a hit!

Halloween Pretzel Treats

What you’ll need:

1 bag of Mini Pretzels (we used the snaps, shaped like squares and they worked great.)

1 bag of Hershey Kisses

1 bag of Candy Corn

Instructions:

1. Preheat oven to 350 degrees F.

2. Line a cookie sheet with parchment paper or foil.

3. Place pretzels on cookie sheet, not touching.

4. Unwrap Hershey Kisses and place one on top of each pretzel.

5. Place filled cookie sheet in the oven and bake for 3-5 minutes, but no longer. You will know when it is time to take them out of the oven when the Hershey Kisses start to get shiny.

6. Take out of the oven and place candy corn on top of Hershey Kisses, gently pushing down.

7. Cool and then transfer to a serving platter. {Place in the fridge to speed up the cooling process}
